I tried baking cut-up tortillas, but they curled up, got very dry and hard, and didn't taste right. I don't want to fry them; the commercial chips are so greasy and salty.

GAYLE DEAR GAYLE Tortilla chips can be baked, but you must use a little oil on them for flavor and texture, to get them crisp rather than hard. Try this technique for crisp chips with a minimum of fat. Brush fresh or thawed frozen tortillas with a very light coating of yege-; table oil olive oil, sunflower oil, corn oil, soybean oil, whatever you prefer. Stack the lightly oiled tortillas and cut through the stack, making triangular tortilla chips of the size you prefer. Spread the triangles on a nonstick baking sheet.

Bake the chips at 400 degrees for five to 10 minutes or until they are lightly brown and crisp. Watch closely so they don't burn. If you like seasoned chips, before baking, sprinkle the triangles lightly with salt, garlic powder, chili powder or whatever seasonings you like. The trick to keeping these low fat is to brush each tortilla VERY LIGHTLY with oil, using a pastry brush for the thinnest, easiest coating. Viva la tortilla! POLLY RECIPE OF THE WEEK: This "pie" with a mashed-potato crust makes a perfect easy main dish for Sunday night supper.

Mix 2 cups mashed potatoes with cup milk, 1 tablespoon butter and 1 tablespoon prepared mustard. Spread evenly in the bottom of a non-stick or greased 8-inch square baking pan. Sprinkle 1 pound cubed cooked ham in a layer on top of the potatoes. In a blender or food processor, mix cup cottage cheese and 2 ounces crumbled sharp Cheddar cheese until fairly smooth. Spread cheese mixture over the ham.

FRANKIE DEAR FRANKIE Many garments that are labeled "dry-clean only" can be safely washed at home, but you do have to assume a bit of risk when you try it. Your rayon and cotton skirt should be washable as long as the colors are colorfast.

Test this by wetting a hidden bit of seam allow- ance or hem facing, and rubbing with a white cloth to see if any color rubs out. If not, you should be able to wash it in cool water with a mild detergent, either by hand or in the gentle or deli- cate cycle of your washer. You may be able to machine-dry it successfully if you use air only (no heat) or a gentle low-heat setting if you have one. However, it would probably be safest to bang it to dry, then press if needed. I have rayon skirts and tops that I've machine-washed and dried using regular heat with no problem at all, but please remember that I can offer no guarantees.

Proceed cautiously and sensibly, recognize that there may be some risk, and you should be happy with the results. POLLY DEAR POLLY When I notice a stain that should be treated with stain remover before putting it into the washing machine, I mark the spot with a clip clothespin. The clothespin is easily removed and the spot is not overlooked. HENRIETTA DEAR POLLY To cut the stem ends off Tabasco peppers, try using fingernail clippers. It works quickly and does not bruise the little peppers.
